Ingredients
- 2 quarts water
- 1 pound black beans
- 1 medium-sized onion, chopped
- 1 green pepper, sliced
- 3/4 cup olive oil
- 1 tsp oregano
- 1 bay leaf
- 2 tbsp apple cider
- 1 tsp salt
- 1/4 tsp pepper
- 1 cup brown rice, cooked (1/3 cup uncooked rice)

Preparation
Step 1
Combine all the ingredients except the rice in a large pot. Bring to a boil and then reduce to low heat. Cook for 2 1/2 hours. At this point, cook the rice. (Beans should be tender in another 30 minutes). When beans are tender, add rice and serve.
