strips thick-cut bacon, diced
cups Brussels sprouts, trimmed & halved
cups butternut squash, peeled & cut into ½ inch pcs
shallot, cut crosswise into ¼ inch slices
Salt & freshly ground pepper
1. Render bacon in a large skillet on high heat. Drain some oil & add Brussels sprouts, butternut squash & shallot. 2. Toss to combine & cook, covered, until browned on all sides & al dente, stirring occasionally. 3. Season with salt & pepper & serve immediately.
