- 1 bunch broccoli rabe or broccoli (about 1 pound)
- 1 large red pepper
- 1 large yellow pepper
- 1 large onion
- 1 pound medium-sized mushrooms
- 1 pound smoked turkey or cooked turkey breast
- 1/2 12-ounce package fettuccine noodles or 6 ounces egg noodles
- olive oil
- 1 9-ounce package frozen artichoke hearts, thawed
- salt
- 2 tablespoons soy sauce

Step 1
About 1 HOUR BEFORE SERVING:
1. Cut off root ends and discard tough outer leaves from broccoli rabe. Rinse well. Slice red and yellow peppers into 1/2-inch-wide strips. Cut onion into wedges; thickly slice mushrooms. Thinly slice turkey breast.
2. Prepare noodles as label directs.
3. Meanwhile, in 12-inch skillet over high heat, in 3 tablespoons hot olive oil, cook peppers, onion, thawed artichoke hearts, and 1/4 teaspoon salt until lightly browned and tender, about 10 minutes, stirring occasionally. With slotted spoon, remove vegetables to large bowl.
4. In same skillet, in 2 more tablespoons hot olive oil, cook broccoli me and 1/4 teaspoon salt until tender-crisp, about 3 to 5 minutes, stirring often; remove to bowl with other vegetables.
5. In same skillet, in 3 more tablespoons hot olive oil, cook mushrooms
and 1/4 teaspoon salt until lightly browned and all juices evaporate. Return vegetables to skillet; add turkey and soy sauce; heat through.
6. Drain noodles. Arrange noodles on platter; top with etable mixture. Toss to serve.
