Ingredients
- 2 cups flour
- 1 1/2 tsp ground cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 2/3 cup sugar
- 6 Tbs butter
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 1 egg beaten
- 3 Tbs sugar
- 1 tsp ground cinnamon

Preparation
Step 1
- preheat oven to 325°
- line baking sheet with parchment paper
- sift together flour, 1 1/2 tsp cinnamon, baking powder & salt, set aside
- in a medium bowl cream together 2/3 cup sugar & butter
- beat in 1 egg, egg yolk & vanilla
- stir in dry ingredients
- divide dough in half
- on lightly floured surface roll each 1/2 of dough into long log, about 9in long & 1 1/2in wide
- place logs on baking sheet & flatten slightly
- brush on beaten egg
- bake for 25 - 30 minutes, until golden and firm to touch
- remove from oven & cool for 15 minutes
- on a cutting board, using a serrated knife, slice each log at a diagonal into 1/2in slices
- mix 3 Tbs sugar & 1 tsp cinnamon in a bowl
- place slices back on baking sheet, cut side down & sprinkle with mixture of sugar & cinnamon
- return to oven & bake for an additional 15 to 20 minutes
- cool completely on wire racks
- store in air tight container
