  • 1 cup sour cream
  • 7 tablespoons flour
  • 1 tablespoon sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • butter
  • maple syrup

Preparation

Step 1

Place griddle or iron skillet over medium heat. You want it nice and hot. Place sour cream in medium bowl. Dump in flour, sugar, baking soda and salt. Stir together very gently. Stop short of it being totally combined. Whisk in the eggs in separate bowl. Add the vanilla and stir to combine. Pour the egg mixture into sour cream/flour mixture. Stir gently, doesn’t need to be totally combined. Melt about a tablespoon of butter on griddle. Pour batter about 1/4 cup at a time. Cook for a few minutes then flip. Top with plenty of butter and maple syrup.
