DARK CHOCOLATE MOUSSE WITH HAZELNUTS AND CHOCOLATE-DIPPED APRICOTS 0 Picture

  • 3/4 cup dark chocolate pieces
  • 12 oz. low fat soft (silken) tofu
  • 3 Tbsp. Frangelico (hazelnut) liqueur
  • 1/4 cup chopped hazelnuts, toasted
  • Fat free whipped topping

Preparation

Step 1

Melt chocolate pieces on medium power in microwave for 1 minute.
Place softened chocolate pieces, tofu and liqueur in blender until smooth.
Spoon mousse into 6 cups. Chill for 1 hour or longer.
For apricots, melt chocolate and dip half of the apricot into the chocolate. Lay on parchment-lined baking sheet. Sprinkle chopped hazelnuts onto chocolate while still melted. Allow to cool.
Garnish with fat free whipped topping, hazelnuts and apricot
