Ingredients
- 1/2 cup wheat berries (use Bob's Red Mill Brand)
- 1 3/4 cup water
- 1/2 cup dried cranberries
- 1/3 cup chopped walnuts
- 1/2 cup thinly sliced spring onions
- 4 oz. goat cheese
- 2 TB balsamic vinegar
- 2 TB EVOO
- 1/2 tsp dijon mustard
- 1/2 tsp honey

Preparation
Step 1
Place wheat berries and water with a large pinch of salt into a pot. Bring to a boil. Cover, turn heat to low and simmer gently for about an hour until soft.
Transfer to a bowl and place in a refrigerator to cool.
Place balsamic vinegar, EVOO, dijon and honey in a bowl and whisk together.
In a large bowl, stir together all ingredients except for goat cheese. Season.
Serve in bowl or plate and garnish with goat cheese.
