Ingredients

  • 1 pound grass-fed ground beef
  • 1 (14.5 oz) diced tomatoes
  • 1 (10 oz) can rotel
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 (6 oz) can tomato paste
  • 1 bay leaf
  • 1 (6 oz) package egg noodles
  • 6 green onions, chopped
  • 1 cup sour cream
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella
  • Optional fresh parsley

Preparation

Step 1

Cook ground beef in a large skillet until no longer pink. Stir in both cans of tomatoes and next 3 ingredients. Cook 5 minutes. Stir in tomato paste and add bay leaf. Cook for 30 minutes and discard bay leaf.

Meanwhile, cook egg noodles according to package directions and drain. Stir together cooked noodles, green onions and 1 cup of sour cream. Place noodle mixture in a lightly greased casserole dish and top with beef mixture. Sprinkle evenly with cheeses.

Bake, covered, for 35 minutes. Uncover and bake and additional 5 minutes. Garnish with parsley if desired.
