  • Cooking spray
  • 1/2 cup all-purpose flour
  • 1/4 cup whole wheat
  • 1/2 cup unsweetened cocoa
  • 1/2 tsp. cayenne pepper
  • 1/4 tsp. salt
  • 1/2 tsp. baking powder
  • 4 Tbs. trans fat free margarine
  • 2/3 cup sugar
  • 1 large egg
  • 2 egg whites
  • 1 tsp. vanilla extract
  • 2 Tbs. strongly brewed coffee, cooled to room temperature
  • 1/2 cup nonfat Greek yogurt
  • 1/4 cup mini semisweet chocolate morsels
  • 1/4 cup walnuts or pecans, chopped

Step 1

Preheat oven to 350 degrees F. Line an 8-inch square baking pan with aluminum foil or parchment paper. Spray with cooking spray.
In a medium bowl, whisk together flour, cocoa, pepper, salt and baking powder and set aside.
In a mixer, cream trans fat free margarine and sugar until combined, about 2-3 minutes. Add egg, egg whites, vanilla and coffee. Continue mixing until incorporated.
With mixer on low speed, slowly add flour mixture, followed by yogurt. Mix gently until just combined, batter will be thick. Stir in chocolate and nuts.
Spread mixture evenly in pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Cool on a wire rack before removing from the pan and slicing into squares.
