Ingredients

  • 3 bananas, sliced
  • 2 Tbsp. no trans fat margarine
  • 1 Tbsp. brown sugar
  • 1/2 tsp. cardamom
  • 1 Tbsp. fresh lime juice
  • 8 gingersnap cookies, crushed
  • 2 Tbsp. chopped pecans
  • 6 , 2 oz. scoops low fat frozen yogurt

Preparation

Step 1

Place margarine and brown sugar in a large sauté pan over medium heat just until bubbly. Add bananas, lime juice and cardamom, and sauté 1-2 minutes; just until heated and flavors combined.
Place gingersnaps and pecans in zip lock bag. Crush with rolling pin or meat pounder. Melt margarine in medium sauté pan; add cookie crumbs and pecans, sauté for 2 minutes until just toasted. Set aside.
Place bananas in bottom of a dessert glass, top with scoop of low fat frozen yogurt, sprinkle with gingersnap/pecan mixture.
