Popovers with Turkey Parmigiana Sauce

Ingredients
- POPOVERS:
- 2 eggs
- 1 c flour
- 1 c milk
- 1/2 t salt
- PARMIGIANA SAUCE:
- 2 T flour
- 3 T butter
- 1/4 t salt
- 1/8 t pepper
- 1 2/3 c milk
- 1/2 c frozen peas
- 1/3 c grated Parmesan cheese
- 1/3 c mayo
- 3/4 t Worcestershire sauce
- 2 c. cut up cooked turkey or chicken

Preparation
Step 1
Heat over to 450°. Generously grease six 6oz. custard cups or 8 medium muffin cups, 2 1/2 x 1 1/4 inches. Beat eggs slightly in medium bowl; stir in flour, milk and salt with wire whisk or fork just until smooth (do no overbeat). Fill custard cups 1/2 full, muffin cups 3/4 full. Bake 20 mn. Decrease oven temperature to 350°. Bake 20 mn. longer or until deep golden brown. While popovers are baking, prepare Turkey Parmigiana Sauce. Immediately remove popovers from cups; split lengthwise in half. Fill with sauce.
Sauce:
Heat flour, butter, salt, pepper, milk and peas to boiling in 3 qt saucepan over medium heat, stirring constantly. Boil and stir 1 mn; remove from heat. Stir in remaining ingredients. Heat over medium heat, stirring constantly, until turkey is hot.
