Ingredients

  • 3 tbsp oil
  • 1 large onion, chopped
  • 1 medium green pepper, diced
  • 1 clove garlic
  • 1 pound Italian or Spanish sausage, sliced
  • 1 cup cubed cooked ham
  • 2 cups uncooked rice
  • 1 can (1 lb-12 oz ounce) tomatoes
  • 3 cups chicken broth or bouillon
  • 1/4 cup of brandy
  • 1 tsp salt
  • 1/8 tsp pepper
  • Dash of Tabasco sauce
  • 1/4 tsp basil
  • 1/8 tsp thyme
  • 1 pound cooked shrimp, shelled and deveined

Preparation

Step 1

Heat oil in a large casserole. Add green pepper, onion, and a garlic, cook until wilted. Add sausage slices and ham cubes and brown lightly. Add rice and cook, stirring often, until pale gold. Add tomatoes, broth, brandy and seasonings. Bring to boil, cover and reduce heat. Simmer 20 minutes. Add shrimp, stir, cover and cook 5 minutes longer, or until rice is tender and liquid almost absorbed.
