  • 2 cups raw walnuts
  • 1 tbsp plus 1 tsp sugar
  • 3/4 tsp curry powder
  • 1/2 tsp coarse sea salt or kosher salt
  • 1 tbsp vegetable oil
  • 1 tbsp butter

Step 1

Spread the walnuts in a single layer on a microwave-safe dish. Microwave, uncovered, on high, until fragrant and lightly toasted, 6 to 8 minutes, stopping once halfway through to stir. Using oven mitts, remove from microwave. While the nuts are toasting, stir 1 tbsp of sugar with curry powder and salt in a medium-size bowl. When nuts are finished toasting, combine vegetable oil and butter in a small saucepan. Whisk constantly over medium heat until boiling. Add walnuts and stir to coat. Cook until shiny and most of the liquid has evaporated, about 1 minute. Transfer nuts to the bowl with the spice mix and toss to coat. Let nuts cool on waxed paper about 10 minutes.
