Kale Salad

A delicious recipe shared with my sewing group by Berita, who grows her own kale.

Ingredients

  • 1 bunch kale
  • 1/2 red onion
  • 1/2 red pepper
  • 1/2 cup dried cranberries
  • 1/2 cup nuts (almonds, walnut, pinenuts--whatever)
  • Dressing to taste

Preparation

Step 1

Wash kale, and remove stem completely from each leaf. Tear kale into little pieces about 1" square. Chop onion and red pepper. Toss kale, vegetables, cranberries and nuts together. Berita--who gave me this recipe--always uses organic Lemon-Ginger dressing from Costco, but I think it works well with a raspberry vinaigrette, or any other sweet dressing to contrast with the tartness of the cranberries and the bitterness of the kale.
