Ingredients
- 1 15.5oz can [kidney] beans, rinsed
- 1 T EVOO + extra
- 1 T lime juice
- 1/2 t cumin
- 4 tortillas
- 4 large eggs
- Salsa
- Feta
- Avocado, cut up
- Cilantro

Preparation
Step 1
1. In a bowl, combine beans, 1T EVOO, lime juice, & cumin.
2. Brush tortillas w/EVOO; bake @ 400°F until crisp, 8-10 min.
3. In a lg nonstick skillet, fry eggs in EVOO until whites are set, 2-3 min.
4. Serve on the tortillas w/ the beans, salsa, Feta, avocado, & cilantro.
