Preparation

Step 1

1.Fill a Dutch oven or a deep fryer with vegetable oil to a 2-inch depth. Heat oil
2.to 350°.
3.In a medium bowl, mix cornmeal, flour, salt, sugar, and black pepper. Add green onion and celery, stirring to combine.
4.In a small bowl, mix together buttermilk, egg, and hot sauce. Combine buttermilk mixture with cornmeal mixture.
5.Drop batter by teaspoonfuls into hot oil. Fry for 5 to 6 minutes, turning several times, until golden brown. Drain on paper towels and sprinkle with Creole seasoning to taste.
