Lemon Pineapple Dessert

Ingredients

  • Crust (for 9x9 pan)
  • 11 double graham wafers crushed or 1 1/4 c crumbs
  • 1/4 c brown sugar
  • 1/3 to 1/2 c melted butter
  • Filling
  • 1 pkg lemon jello
  • 1 c boiling water
  • 1 c juice from crushed pineapple
  • 1 19 oz can crushed pineapple
  • 1/2 lb white miniature marshmallows
  • 1/2 pint whipping cream, stiffly whipped

Preparation

Step 1

Mix crumbs with butter and brown sugar
Pat 2/3 of mixture in to bottom of a sprayed 9 x 9 pan
Reserve rest of the crumbs for the top
Dissolve jello in boiling water
M ix well
Add pineapple juice
Stir thoroughly and refrigerate to allow to thicken
When jello is thickened, but not set, add crushed pineapple and marshmallows
Fold in whipping cream
Pour on top of crumb base and sprinkle with remaining crumbs
Let set in refrigerator overnight
