Ingredients
- SAUCE:
- 2 tbsp. olive oil
- 2 diced onions
- 1 diced rib of celery
- 1 diced carrot
- 4 cloves garlic
- 2 can tomato paste
- 675 gr lean ground beef
- 2 cans diced tomatoes - 796 ml
- 1 cup red wine
- 2 bay leaves
- 2 tsp oregano
- 1 tsp salt
- 3/4 tsp pepper
- RICOTTA MIXTURE
- 1 tub extra smooth ricotta cheese
- 1 egg
- 1/2 cup basil chopped
- 1 minced garlic clove
- 1/2 tsp salt and pepper
- 1 cup grated parmesan
- MOZZARELLA
- 4 1/2 cups shredded mozzarella
- NOODLES
- 12 lasagna noodles

Step 1
SAUCE
Saute oil, onions, celery, carrot and garlic till soft - about 5 minutes. Add tomatoe paste and ground beef. Cook till beef is no longer pink. Add remainder of ingredients and cook for 40 minutes on low heat till thick.
RICOTTA MIXTURE
Mix all ingredients
NOODLES
Cook noodles 2 minutes less than package requires.
Spray 13 x 9 baking dish. Put 1 1/2 cups of sauce aside. Put 1/3 of sauce in pan. Add one layer of noodles. Sprinkle 1 1/2 cups cheese. Add another lay of meat sauce, another layer of noodles, the ricotta mixture, another layer of noodles, remainder of sauce and then remainder of noodles. Top with reserved sauce and remainder of mozzarella cheese.
Bake at 375 for 45 minutes covered. Remove foil and bake for 15 minutes till cheese is bubbly and golden. Sit for 30 minutes before serving tented with foil.
