Peanut Butter Cookies

Ingredients

• 1/2 C sugar
• 1/2 C packed brown sugar
• 1/2 C peanut butter
• 1/4 C shortening
• 1/4 C butter/margarine, softened
• 1 egg
• 1 1/4 C flour
• 3/4 t baking soda
• 1/2 t baking powder
• 1/4 t salt

Preparation

Step 1

mix sugars, peanut butter, shortening, butter/margarine & egg in large bowl. Stir in remaining ingredients. Cover & refrigerate about 2 hrs or until firm.

heat oven to 375.

shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern w/fork dipped into sugar.

bake 9 to 10 mins or until light golden brown. Cool 5 mins; remove from cookie sheet and cool on wire rack.
