Ingredients
- 1/2 cup. yellow cornmeal
- 1/2 cup. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbs. sugar
- 1 large egg, lightly beaten
- 1/2 cup. evaporated skimmed milk
- 2 Tbs. vegetable oil
- Cooking spray

Step 1
Combine first 5 ingredients in a med. bowl. Add egg, milk, and oil; stir until batter is smooth. Coat a cast-iron
corn stick pan with cooking spray. Heat in a 425* oven for 3 mins. or until hot. Remove from oven; spoon batter into pan, filling 2/3 full.
Bake at 425* for 10-12 mins or until lightly browned.
