Parsley pasta with sautéed artichokes

Ingredients

  • 12 oz whole wheat pasta
  • Evoo
  • 4 closed chopped garlic
  • 1/4 tsp red pepper
  • 1 16oz pkg frozen artichokes thawed and roughly chopped
  • 1/2 c dry white wine
  • 2 tsp lemon zest
  • 2 tbs lemon juice
  • 1 leg bunch fresh parsley chopped in processor
  • 2 tbs grated cheese

Preparation

Step 1

Cook pasta
I'm skillet heat oil in leg skillet, add garlic and red pepper till garlic turns golden
Add the artichokes to the pan ,raise heat to med cook till golden brown
Add wine, lemon zest and juice simmer for 2-3 minutes
Stir in the parsley and cook for 1 minute. Toss the mixture with the pasta add cheese and serve.
