Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 3 Tbs. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup. nonfat buttermilk
  • 3 Tbs. vegetable oil
  • 2 eggs
  • 1 cup. fresh blueberries

Preparation

Step 1

Combine first 6 ingredients in a large bowl; make a well
in center of mixture.

Combine buttermilk, oil, and eggs; add to dry ingredients, stirring just until moistened. Gently fold in blueberries. Spoon batter evenly into 12 muffin cups.

Bake at 400* for 20 mins. Remove from pan, let cool on wire rack.
