Ingredients
- 1/4 c canola oil
- 1 med onion, chopped
- 2 cloves garlic peeled
- kosher salt and freshly ground pepper
- 1/4 c Hungarian sweet paprika
- 2 lbs beef chuck cut into 1 in cubes
- 1 lb new potatoes cut into 1/2 in cubes
- 2 med carrots, cut into 1/2 in chunks
- 2 roma tomatoes, chopped
- 1 green pepper sliced
- Buttered noodles or whole wheat bread for serving

Step 1
Heat the oil in a large Dutch oven over med high heat. Add the onions and sauté until tender, about 6 min. Add the garlic and some salt and pepper and sauté until fragrant about 1 min. Lower the heat so the paprika wont burn and give a bitter taste, and stir in the paprika.
Sprinkle the beef on all sides with salt and pepper. Return the pot to med high heat, and add the beef cubes to the pot, turning to cover the beef with onion mixture and cook until browned, about 6 min. Add 2 c cold water, cover with a lid, reduce heat to med and stew for 45 min.
Remove the lid and add the potatoes, carrots, tomatoes, and green peppers, cover and stew until the beef is tender, about 30 min more, stirring on occasion.. Adjust to taste with salt and pepper. Serve with noodles or bread to sop up the juices.
