  • MINI PIMIENTO MEATBALLS

  • MAKES 24 MEATBALLS.

  • 1

    pound ground beef

  • 4 oz jar pimientos, drained, chopped

  • ½

    cup breadcrumbs

  • 1

    egg, beaten

  • Salt

  • 2

    tbs oil

  • 2

    tbs tomato paste

  • cups chicken broth

  • 1

    tbs brown sugar

  • 1

    tsp red wine vinegar

Directions

Mini Pimiento {Meatballs} Put beef in a bowl. Add pimientos, breadcrumbs, egg, and salt, mix. Form into 24 meatballs. Heat oil in a skillet. Add meatballs, cook until browned, transfer to a plate. Add tomato paste to skillet, cook until darkened. *Add broth, brown sugar and vinegar, cook until sugar dissolves. Return meatballs to skillet, simmer spooning liquid over meatballs until meatballs are cooked through. Transfer to a platter. SERVE & ENJOY...
