Chicken and Cranberry Boats

This is a great appetizer. Very refreshing. If you want it as a main meal just plate it like a salad

Ingredients

  • 3 green onions, thinly sliced
  • 1 cup chopped cooked chicken
  • 1/4 cup MIRACLE WHIP Dressing
  • 1 tsp. grated fresh gingerroot
  • 1 tsp. grated orange zest
  • 2 heads Belgian endive, root ends trimmed, leaves separated
  • 1/3 cup whole berry cranberry sauce

Preparation

Step 1

RESERVE 1/4 cup of the onions for later use. Mix remaining onions, the chicken, dressing, gingerroot and orange zest until well blended.

SPOON about 1 Tbsp. of the chicken mixture onto each lettuce leaf; top each with 1 tsp. cranberry sauce.

SPRINKLE evenly with the reserved 1/4 cup onions.
