This was very good. I served it with a black bean, avocado salsa. Dan may have not liked it as much as I did but he did eat it.

Ingredients

  • 3 large eggs
  • 1 large egg white
  • 2 tablespoons milk
  • 2 tbsp. finely chopped fresh flat-leaf parsley
  • Coarse salt and fresh ground pepper
  • 1 tablespoon olive oil
  • 1/2 onion, finely chopped
  • 1 clove garlic, minced
  • 1 cup grape or cherry tomatoes, halved and seeded
  • 1 jalapeno chile, minced
  • 2 oz crumbled goat cheese

Preparation

Step 1

*Heat* broiler, with rack 4 inches from the heat source.

*In* a large jar, whisk together eggs, egg white, parsley and a couple of tablespoons of milk; season with 1/2 teaspoon salt and 1/4 teaspoon pepper.

*Heat* oil in a medium size oven proof skillet, over medium heat.
*Add* onion and jalapenos; cook, stirring occasionally, until onion has softened, about 6 minutes. *Stir* in tomatoes and garlic then pour over egg mixture.

*Cover*, reduce heat to low, and cook until eggs are almost set, 5 to 7 minutes.

*Uncover* skillet, dot evenly with cheese and place frittata under broiler. *Cook* until the top is set and just beginning to brown, 3 to 4 minutes.

*Remove* from oven and let rest 5 or 10 minutes then remove to cutting board, cut into wedges and serve with black bean and avocado salsa.
