I was making a recipe for a Spring Risotto, and I realized that I did not have mascarpone cheese! I surfed the internet and found this substitute worked like a charm-- at less than half the cost.

(8 ounce) package cream cheese
cup heavy whipping cream
tablespoons sour cream
Combine well and use in recipes calling for Mascarpone cheese. NOTE: Do not substitute low fat cream cheese or low fat sour cream!
