Ingredients
- Cherry Brandy:
- 6 cl cherry brandy (recipe follows), chilled
- 2 cl kirschwasser
- 1 cl Cointreau
- 1 tsp amarena syrup, or to taste
- few lemon drops
- 100 g pitted jarred cherries
- 25 g dried cherries
- 100 g brandy
- 1-2 drops almond extract

Preparation
Step 1
To prepare a cherry sidecar, add all the ingredients to a well chilled mixing glass and stir.
Transfer onto a chilled cocktail glass and garnish with candied amarena cherries and a small curl of lemon peel (optional).
Cherry Brandy:
Cut the jarred cherries and the dry ones in 3-4 pieces and transfer them in the body of a whipped cream dispenser.
Add the brandy and the almond extract to the cherries, close the canister, and charge with 2-3 N2O cartridges, shaking well after each cartridge.
Let the brandy and cherry infuse for 30-40 minutes shaking vigorously every 4-5 minutes. At the end of the infusing time, quickly vent the whipped-cream canister pointing the nozzle away from you.
Strain the brandy through fine meshed cheesecloth (I prefer to use a pure cotton handkerchief actually) over a bowl and squeeze all the liquids well out of the cherries.
Reserve the brandy under refrigeration (Not for preservation purposes. It tastes better this way) until needed.
