Ingredients
- 3/4 lb gemelli or casarecce pasta
- 4 oz goat cheese
- 5 TB oilive oil
- Red pepper flakes
- 4 oz baby arugula
- 3/4 c walnuts, toasted & chopped
- 1/3 c finely chopped chivees

Step 1
Cook pasta until al dente. Combine cheese, oil, 1/4 tsp ea salt and red pepper flakes, stirring and mashing with a fork til lslmooth. Drain pasta reserving 3/4 c cooking water and return to pan.
Add arugula, goat cheese mix and reserved pasta cooking water; toss until cheese evenly distributed and arugula begins to wilt.
stir in walnuts and chives, reserving some for garnish. Season with salt and red pepper flakes. serve
