Ingredients

  • 2 sticks butter, softened
  • 1 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp double strength vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon (generous - use more if you like)
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cloves
  • 3 cups dry uncooked quick-cooking oats
  • 1 6 oz pkg raisins or baking raisins
  • 1 bag butterscotch chips
  • 1 cup chopped nuts

Preparation

Step 1

Preheat oven to 350 degrees. Beat together the butter and sugars until creamy. Add the eggs and vanilla and beat well. In a separate bowl, sift together the flour, baking soda, salt and spices. Add the dry ingredients to the creamed mixture, mix well. Stir in the oats. Add the raisins, butterscotch chips and nuts and mix well. Using a cookie scoop or a tbsp, drop the dough onto greased or parchment-lined cookie sheets. Bake at 350 for 10-12 minutes or until golden brown. Cool 1 minute on cookie sheet, remove to wire rack.
