Ingredients

  • 1 Granny Smith apple, sliced into matchsticks
  • 1 Pear, sliced into matchstiks
  • EVOO
  • 1 Tbsp. lemon juice
  • 1 Tbsp. fresh basil
  • kosher salt
  • black pepper
  • 8 chunks of Parmigian-Reggiano cheese
  • 4 tsp. aged Balsamic vinegar

Preparation

Step 1

Using a mandolin or sharp knife, cut a cored Granny Smith apple and cored firm pear into thin matchsticks.

Place the fruit in a bowl, then add 1 Tbsp. EVOO and 1 Tbsp. lemon juice; toss to coat.

Add 1 Tbsp. thin sliced fresh basil and toss again, then season with salt & freshly ground black pepper.

Divide the fruit among 4 plates, then place 2 chunks at the center of each. Drizzle 1 tsp. aged Balsamic vinegar around the cheese on each plate, then sprinkle lightly with pepper.

Serve at room temperature.
