Ingredients
- 1 - 9 " Pie Crust
- 6 Ripe Tomatoes, cut into 1/4" rounds
- Coarse Salt
- 2 Cups Freshly Grated Gruyere Cheese
- 1/2 Teaspoon Fresh Grated Nutmeg
- 1/4 Teaspoon Black Pepper
- 2 Tablespoons Fresh Thyme
- 1 Tablespoon Chopped Fresh Parsley
- 1 Tablespoon Extra Virgin Olive Oil

Preparation
Step 1
Preheat oven to 37 degrees
Place one 9" pie crust into a 9" tart pan. Prick bottom of crust with fork. Bake crust for 10 minutes and then allow to cool slightly.
Sprinkle sliced tomatoes with salt and let drain on paper towel for approx 30 minutes. Pat dry.
Spread cheese over bottom of pie crust. Arrange tomatoes over cheese in an overlapping circular pattern, covering the surface. Sprinkle with nutmeg, pepper, thyme, and parsley. Drizzle the top with olive oil.
Bake for 40 minutes and then let rest for 10 minutes. Serve hot or at room temperature.
