Ingredients
- 2 tablespoons unsalted butter
- 1/2 medium red onion, chopped
- 2 jalapenos, seeded and chopped
- 2 tablespoons all purpose flour
- 1 1/2 cups whole milk
- 1 1/2 cups shredded pepper jack cheese
- 1 1/2 cups shredded part skim mozzarella
- 1 plum tomato, seeded and chopped
- Juice of 1 lime
- 1/4 teaspoon chili powder
- Big dash of hot sauce
- Big dash of Worcestershire sauce
- Bagel chips for serving

Step 1
In a large saucepan, heat the butter over medium high heat. Once it's melted and foamy, toss in the onion and jalapenos, and saute until soft, about 5 minutes. Stir in the flour and stir for a few minutes, until pasty and golden. While stirring, pour in the milk, and cook until the sauce is thick, about 3 minutes. Turn heat to medium low, and add the cheese by handfuls, stirring well between additions, until all the cheese is completely melted. Add the chopped tomato, lime juice, chili powder, hot sauce, and worcestershire sauce, and stir until everything is well combined. Serve immediately with bagel chips.
