Black Bean Salad

Ingredients

  • 1 15 oz can Jalapeno black bean with lime juice, rinsed and drained
  • 1 15 oz can reduced sodium black beans, rinsed and drained
  • 2 tomatoes, finely chopped
  • 1 Serrano chile pepper, seeded and chopped
  • 1 orange bell pepper, seeded and chopped
  • 3-4 green onion, chopped
  • 1/4 c pinot grigio white wine vinegar
  • 2 T vegetable oil
  • 1/2 t salt

Preparation

Step 1

In a medium serving bowl, mix together the ingredients and chill for 1 hour before serving.
