Ingredients

  • 10 oz uncooked chorizo sausage (or other lightly spiced, smoked sausage), about 3 medium
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 tsp smoked paprika
  • 6 medium potatoes, peeled and cut into 1/2" cubes
  • 4 cups beef or chicken broth
  • 2 cups water
  • 1 lb bunch kale
  • 1/2 tsp slat
  • 1/4 tsp pepper
  • Portuguese piri piri sause (or other hot sauce) for garnish

Step 1

With a fork, prick several holes in each sausage and place in a small skillet. Add just enough water to cover bottom of pan and cook, covered, over medium heat, turning sausages once or twice, until no longer raw and some of fat has cooked out, about 7-10 minutes. Remove sausages from pan, let cool slightly and cut into 1/2 inch cubes. Set asside.

Heat olive oil in a large saucepan or Dutch oven over medium heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add sausages, garlic and paprika and continue to cook, stirring often, until sausages start to brown and onion is golden, about 3-5 minutes. Add potatoes, broth and water, increase heat to medium, cover and bring to a boil. Then reduce heat to low and continue to cook for 15-20 minutes, stirring occasionally, until potatoes are very soft.

With a slotted spoon, remove about 2 cups of potato cubes and place them in a bowl. With a fork, mash potatoes well, then stir them back into soup.

Prepare kale by stripping leaves from stems (discard stems or save to make stock). With a sharp knife, cut kale crosswise into very fine shreds. Add kale to soup, stir well and cook for 3-5 minutes or until kale is tender. Season with salt and pepper to taste.

If you want to add a little spice, serve soup with a drizzle of Portuguese piri piri sauce over top.
