Buttermilk Waffles

These waffles give you all of the cozy comfor and crisp, light taste you yearn for, but with so much more to feel good about, thanks to their fiber-rich whole wheat and healthy oil. They are equally decadent served simply dusted with confectioners' sugar or smothered in Chunky Strawberry Topping.

Ingredients
- 3/4 c all-purpose flour
- 3/4 c. whole-wheat pastry flour or whole-wheat flour
- 2 tblsp toasted wheat germ
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 c. low-fat buttermilk
- 1 tblsp canola oil
- 1 tblsp honey
- 1 large egg
- 1/2 tsp vanilla extract
- nonstick cooking spray
- 1 recipe Chunky Strawberry Topping or confectioners' sugar for
- garnsih, optional

Step 1
Preheat a waffle iron,
In a large bowl, whisk together the flours, wheat germ, baking powder, baking soda, and salt. In another large bowl, whisk together the buttermilk, oil, honey, egg and vanilla. Stir the wet ingredients into the dry ingredients, mixing just enough to combine them.
Spray the waffle iron with cooking spary. Ladle enough of the batter to cover three-fourths of the surgace of the waffle iron (a heaping 1/2 c. for a 6 inch waffle iron), close it, and cook until golden brown, 3-5 minutes. Repeat with the remaining batter. Serve with the Chunky Strawberry Topping or a dusting of confectioners' sugar, if desired.
