Black Bean Soup

Ingredients

  • 2 Tablespoons oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 4 carrots, diced
  • 3 celery ribs, diced
  • 1 Tablespoon Chili Powder
  • 1/2 teaspoon cumin
  • 6 cups vegetable broth
  • 1 (15 oz) can black beans
  • Salt and pepper
  • sour cream
  • chopped cilantro

Preparation

Step 1

Saute onions, garlic, bell pepper,carrots and celery in oil. About 12 minutes or until softened. Add chili powder and cumin. Saute for 3 more minutes. Add broth and beans and bring to a boil. Reduce heat to simmer and cook for 25 minutes Remove some of the soup and puree. Season with salt and pepper. top with sour cream and chopped cilantro.
