Ingredients
- 1 small heat radicchio, shredded
- 5 peperoncini, stemmed, seeded and chopped
- 2 oz fresh goat cheese
- 1 tsp red wine vinegar
- 1 tsp extra-virgin olive oil
- 1 Tbsp toasted pine nuts
- 24 thin slices soppressata (4 oz.)

Preparation
Step 1
1. Toss together all ingredients except soppressata.
2. Arrange soppressata on a work surface and mound some radicchio salad on each piece. Roll up the salad in the soppressata slices to form cones and serve.
