Ingredients

  • 2 C. water
  • 1 (8 oz) container one-step chicken stuffing mix
  • 3/4 lb. turkey tenderloin, cut into 1/2" cubes
  • 2 (10 oz) frozen peas and carrots, thawed
  • 1 (10 3/4 oz) 98% fat free cream of chicken soup with 30% less sodium
  • 1 (8 oz) nonfat sour cream
  • 1 (4.5oz) sliced mushrooms, drained
  • 2/3 C. skim milk

Step 1

Spray 13X9 baking dish with Pam. In medium saucepan, bring water to boil. Stir in stuffing mix. Cover and let stand 5 mins.

In large skillet, cook turkey over medium heat until no longer pink. Add peas and carrots, soup, sour cream, mushrooms and milk; mix well. Heat until bubbly. Spoon 2/3 of stuffing evenly into dish. Top with turkey mixture then remaining stuffing.

Bake 450* for 10 to 15 mins. or until bubbly and browned. Let stand 5 mins. before serving.
