  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, melted

Preparation

Step 1

Whisk together flour, sugar, baking powder, baking soda and salt in a large bowl. In a separate container, whisk together the buttermilk, egg, vanilla and melted butter. Whisk the wet ingredients into the dry just until mixed. Some lumps may remain.

Heat a skillet over medium heat. When the skillet is hot, coat with cooking spray or add a small pad of butter to grease. Pour ¼ cup batter onto the skillet. Allow to cook until bubbles are covering the surface. Flip and cook another 1-2 minutes on the second side until golden brown.
