Ingredients

  • MARINADE:
  • 1/2 head green cabbage, finely chopped
  • 1 sweet onion, finely chopped
  • 2 cucumbers, finely chopped
  • 2 stalks celery, finely chopped
  • 1 green or red bell pepper, finely chopped
  • 2 carrots, peeled and finely chopped
  • 3 tomatoes, finely chopped
  • 2 cups cauliflower, finely chopped (optional)
  • 1/3 cup apple cider vinegar
  • 2/3 cup olive oil
  • 1-2 tbsp Greek Seasoning or Celery salt
  • 1-2 tbsp sugar
  • Penzey's freshly ground pepper to taste

Preparation

Step 1

In a large bowl, combine all of the vegetables and toss to mix. In a container with a lid, combine all of the marinade ingredients and shake to mix well. Pour the marinade over the veggies, toss to coat and refrigerate for a least 30 minutes before serving.

NOTE: You can use whatever vegetables you have on hand.
