Ingredients
- Coconut Cilantro Lime Sauce:
- 1 cup sour cream
- 1 cup mayonnaise
- 1/2 cup coconut milk
- 1/4 cup lime juice
- 4 tablespoons chopped fresh cilantro
- 2 tablespoons apple cider vinegar
- 4 large garlic cloves minced
- Deep Fried Mahi Mahi Fingers
- 3 pounds fresh Mahi Mahi Fillets cut into 2" by 3" pieces
- 3 large eggs beaten
- 1 1/2 cup all purpose flour
- 3/4 cup rice flour
- 2 tablespoon Seafood seasoning
- 2 teaspoons salt
- 1 teaspoon pepper
- Vegetable oil

Step 1
1. For Lime sauce combine all ingredients, ad stir well with a whisk. Cover sauce, and chill.
Mahi Fingers:
In a bowl, beat the egg. In a large bowl add all purpose flour, rice flour, seafood seasoning, salt and pepper. Mix the ingredients well. Preheat fryer adding the oil and following directions. Place Mahi Mahi into egg mixture and make sure pieces are all coated with egg mixture. Place the Mahi Mahi into the flour mixture, making sure Mahi is coated. Fry in batches in the hot oil or at about 370 degrees until golden brown. Drain on rack and season with salt and pepper if desired. Serve with a cup of Coconut Cilantro Lime sauce. Yield serves 4. Really good recipe for a party or for dinner some evening.
