Ingredients
- 1 C. sliced onion
- 1 C. red bell pepper strips
- 1 C. yellow bell pepper strips
- 10 garlic cloves, minced
- 1/2 C. grated Parmesan cheese
- 1/4 C. chopped fresh or 4 t. dried basil
- 4 t. dried oregano
- 1/4 t. salt
- 1/4 t. pepper
- 2 C. sliced zucchini
- 3 medium tomatoes (about 1 1/2 lb) cut into 1/4" slices
- 1 small eggplant (about 1 lb) peeled and cut into 1/4" slices

Step 1
Spray skillet with Pam. Add onion, bell peppers and garlic; saute 4 mins. Remove from heat and set aside.
Combine cheese and next 4 ingds. (cheese through pepper) set aside. Arrange half each of zucchini, tomato, and eggplant slices in 13X9 baking dish sprayed with Pam; top with half of onion mixture, and sprinkle with half of cheese mixture. Repeat layers with remaining ingds.
Cover and bake 350* for 40 mins. Uncover and bake an additional 10 mins. Serve warm or at room temperature with corn bread or baked tortilla chips.
