Ingredients
- 2 pounds chicken breast tenders
- 4 tablespoons flour
- 1 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 teaspoons poultry seasonings
- 1 clove garlic, crushed and minced
- 1 (3 ounce) package pine nuts
- 2 eggs, beaten
- Extra-virgin olive oil, for shallow frying

Step 1
Turn chicken tenders lightly in flour and season with salt and pepper. In food processor, combine flour, bread crumbs, Parmesan, seasonings, garlic and pine nuts; pulse-process to chop nuts and distribute flavors. Put onto plate. In a shallow dish, beat the eggs.
In a large skillet, heat a thin layer of olive oil over medium to medium/high heat. Coat the tenders in the eggs and then in the breading. Place in the skillet. Cook about 3-4 minutes on each side or until the chicken’s juices are clear and the breading is brown.
