Ingredients
- 1 pound cooked medium shrimp
- 1 cup diced cucumber
- 1 cup cilantro
- 2 carrots, shredded
- 1/3 cup sweet chili sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon minced ginger
- 12 large rice paper wrappers

Preparation
Step 1
In bowl, toss all except wrappers; season. Soften one wrapper in water; arrange filling in center. Fold in one long side. Fold in short sides; roll up. Repeat.
