Quick Chunky Chicken Noodle Soup

Marjoram and thyme come through nicely in this old-fashioned soup that tastes just like Grandma used to make. You can modify the recipe to include vegetables your family enjoys. My kids love carrots, so I always toss in extra. —Coleen Martin, Brookfield, Wisconsin

Ingredients
- 1/2 cup finely chopped carrot
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped onion
- 1 teaspoon butter
- 6 cups chicken broth
- 1 1/2 cups cubed cooked chicken
- 1 teaspoon salt
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon dried thyme
- 1/8 teaspoon pepper
- 1 1/4 cups uncooked medium egg noodles
- 1 tablespoon minced fresh parsley

Step 1
Saute the carrot, celery and onion in butter in a Dutch oven until tender. Stir in the broth, chicken and seasonings. Bring to a boil. Reduce heat. Add noodles; cook for 10 minutes or until noodles are tender. Sprinkle with parsley. Yield: 6 servings.

This was so easy to make and was so good even my husband who isn't a soup lover went back for seconds and said it was really, really good. I did use 2 additional cups of chicken broth and added a few tsps of chicken bouillon, I think next time I'll use chicken stock and probably won't need the chicken bouillon. I gave it a nice shake of garlic and onion powder too. This was simple, quick and really did taste like it took more work.
We loved this my picky six year old too. I cooked a whole chicken and stuffed it with onion and garlic and seasoned the chicken. I will use the left over chicken for a meal later in week. I was out of thyme so I used basil. My husband does not like onions so I did not put them in the soup and added extra carrots and celery. I also made home made bread that I got off of taste of home that I love. It was a great fall soup it would be good with homemade noodles too!
Quick and easy recipe for a tasty chicken noodle soup... Added some fresh garlic and left out the marjoram since I didn't have any. Doubled the recipe and barely had any left with 5 people!

This was quick to assemble and tasty. i used brown rice instead of the noodles, more healthy version I think.

I was feeling sick and this was a quick comfort food to cook up. I added extra veggies and chopped onions, also added some basil and oregano. I thought it was a little salty... next time I'd cut some of the added salt.
