Ingredients

  • 2 cups fresh strawberries-hulled and sliced
  • 4 Tablespoons Sugar or artificial sweetener
  • 4 bananas- sliced
  • 2 cans mandarin oranges-drained
  • 1/2 cup shredded coconut (optional)
  • 1 small package strawberry Jell-O (I used sugar-free)
  • 1 cup whipping cream
  • 6 tablespoons powdered sugar
  • 1 teaspoon vanilla

Preparation

Step 1

Put 18 cupcake liners in cupcake pans.
Sprinkle 4 tablespoons sugar over sliced strawberries and allow to sit. Mix cream with powdered sugar. Whip cream with electric mixer until soft peaks form. Add vanilla and Jell-O. Beat for one more minute. Stir strawberries, bananas, oranges and coconut into the whipped cream mixture. Scoop into cupcake liners with a food scoop. Freeze until hard. Put individual cups into a large Ziplock bag. Take out of freezer 15-20 minutes before serving.

Notes
If you want to lighten this recipe you could use lite or fat free cool whip instead of the cream and powdered sugar.
