  • 2 pounds red skin baby potatoes
  • 1 small red bell pepper, seeded and cut into thin strips
  • 1 green pepper, seeded and cut into thin strips
  • 1 small onion, thinly sliced
  • 4 large cloves garlic, finely chopped
  • 1 teaspoon crushed red pepper flakes
  • 1/4 cup tablespoon extra-virgin olive oil
  • Salt and pepper

Step 1

Preheat oven to 500° F.

Quarter the potatoes and place the potatoes in greased 9x13 baking dish. Combine with peppers, onion, garlic, and red pepper flakes. Mix and coat with olive oil (about 2-3 tablespoons). Season with salt and pepper.

Roast in oven for 20 to 22 minutes (turning after 10 minutes), until potatoes are just tender.
