  • 1/2 cup flour
  • 1 tsp. sugar
  • 1/4 tsp. salt
  • 3 eggs, well beaten
  • 1/2 cup milk

Preparation

Step 1

Pare, core and slice apples into a heavy, deep, oven-safe frying pan. Cook over moderate heat with a tablespoon or two of butter until apples are tender, turning with a wide spatula.

Sift together into a mixing bowl, flour, sugar and salt. Stir eggs and milk together and stir into flour mixture. Beat until smooth.

Pour over hot apples in frying pan and place in 425 degree preheated oven. Bake about 15 minutes, or until almost done, then sprinkle with granulated sugar and cinnamon. Dot with small bits of butter (about 2 tablespoons) and put back in oven until brown and done, about 5 minutes. Serve immediately, sprinkling each serving with a little lemon juice. Makes 4 to 5 servings.
