MY NOTES: We loved this cake...even Jack, who is not a great banana-lover. I froze it and Jack liked it very cold, but I liked to cut a slice and defrost it for half an hour before eating it because I like the frosting better soft. Jack said this recipe is a keeper!I also baked it simply as a 13"x9" cake with the frosting on top.

Ingredients

  • CAKE:
  • 1 pkg. (2-layer size) yellow cake mix
  • 3 eggs
  • 1 cup mashed ripe bananas (about 3 bananas)
  • 1 cup sour cream
  • 1/4 cup oil

  • FROSTING:
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 stick butter, softened
  • 1 pkg. (16 oz.) powdered sugar (about 4 cups)
  • 1 cup walnuts, finely chopped
  • 1 teaspoon Vanilla Extract

Preparation

Step 1

PREHEAT oven to 350°F. Grease and flour 13x9-inch baking pan; set aside. Beat cake mix, eggs, bananas, sour cream and oil in large bowl with electric mixer
on low speed just until moistened, stopping frequently to scrape bottom and side of bowl. Beat on medium speed 2 min. Pour into prepared pan.
BAKE 35 min. or until wooden toothpick inserted in center comes out clean. Cool completely.

BEAT cream cheese and butter in large bowl with electric mixer on medium speed until well blended. Gradually add sugar, beating well after each addition. Add vanilla.

REMOVE cake from pan; cut crosswise in half. Place one cake half, top-side down, on large serving plate; spread top with frosting. Top with remaining cake half, top side up. Frost top and sides of cake with remaining frosting. Carefully press walnuts into frosting on sides of cake. Store in refrigerator.

How to Neatly Frost the Cake -
Freeze cake layers about 20 min. before frosting. This helps to set the crumbs on the cut edges of the cake layers so they don't pull up into the frosting. And don't worry if the frosting does not look perfect on the sides of the cake - the nuts will cover any imperfections.

This was easy and moist. I left if as a 9x13 because of time. The only thing I did different was add vanilla to the frosting. Next time will try like picture b/c looks so pretty.

This cake was sooooo good. I made it for my family and they just loved it. It was very easy to make. since it was just for my family I left it in a 9x13 pan, frosted it and put nuts on it. It was gone in a flash. I think for a party I would do it as recipe calls for...looks a little fancier.

This cake was very good, but I agree with those who said it was a bit too sweet. I would definitely cut back the sugar by a cup. I would also use 2 8" or 9" round pans next time instead of the 9 x 13. I love to bake and it took me 2 times baking & slicing to get it right. 2 round pans would make it a lot easier & you won't have to slice the cake!

This is a deliciously moist and flavorful cake...and is so easy. Everyone loved it and many asked for the recipe. I toasted the walnuts to bring out their flavor. When I make this cake again, I'll sprinkle nuts between the layers. The contrast between the toasted walnuts and sweet bananas was fantastic. Print several copies of this recipe. Your friends will be asking for them!

I made this for my moms 60th birthday! And my whole family loved it. I am the youngest in the family. And they all were so proud. I didn't tell them how easy it was.

This cake has a great flavor and is very yummy. The only thing I would change is the amount of sugar it contains. Maybe 3 cups instead of 4, we found that it was a bit too sweet.

Also great as just one layer! I baked this cake for our church dinner and just left it as a single layer 13 x 9 cake. It went over very well--everyone loved it. I baked it the night before and left it out to cool. I also made the frosting and stored it in the fridge overnight, and in the morning let it sit to room temp before putting on the cake. Also, I didn't have butter but used a stick of margarine instead--it turned out so great that I'll never buy canned cream cheese frosting ever again. I will definitely make this cake again, probably numerous times before the new year. It was delicious, the banana taste is just right, not too overpowering.

I used two square baking dishes instead of cutting one. I thought that it was easier. This was best served cold.,

I would make it again in 2 round cake pans or not cut the 9X13. Had lots of icing. I would also add nuts to the batter

I baked this cake on 9/16/07. Very delicious, My 18 yr old grandson and his friends devoured the entire cake in one setting.

This receipe was so good it was gone in less than one hour!

The batter was not enough to cut this cake in half to fill it. It did not come out looking as thick as the picture. Maybe a cake extender would help. I just used the frosting on the top. If I had filled it, I would have needed more frosting. The cake tasted Ok, the frosting was the best part.

The cake was very good. The iciing was very rich. Next time I will not cut the cake. And I will only put 2-1/2 cups conf. sugar in recipe. Add 1 tsp. vanilla. I used Pecans instead of Walnut. Will make again with changes...

Superb all the way around! I have some non-walnut people in my household, so I put the nuts on only 2 sides of the frosted cake. Next time, I will try with a butter cream frosting or maybe just whipped cream. The cream cheese frosting was delicious, but very very rich.

Only finished making this cake two hour's ago. But it is almost all gone. It's that good. The frosting taste just like a carrot cake only this is banana. Plus all the ingredients I already had on hand. So now I can use up those banana's the kid's want eat. Make a cake and the kid's eat it all up. Great, I just love it.

WONDERFUL!! The amount of banana was just right. The taste was mild but had enough flavor to notice. Very moist and the frosting was a nice touch.

Knowing that my favorite cake is banana, I arrived home one day from work and my Husband had made this receipe. It will definitely be made again. The texture was excellent as well as the flavor, not to mention coming home to the wonderful aroma.
